Chipotle Bowl

½ cup cooked quinoa

12 oz chicken breast

¼ teaspoon chipotle powder

½ teaspoon salt

¼ teaspoon black pepper

½ bell pepper, chopped

1/ cup shredded carrots

2 cups shredded lettuce


  • Cook the quinoa according to package directions. Preheat the oven to 425 degrees.
  • Season each side of chicken breast with chipotle powder, salt, and black pepper. Place the chicken breast on a baking sheet and roast for about 15-18 minutes or until chicken is cooked through. Let cool slightly before chopping.
  • Assemble bowl: for each serving add 1 cup shredded lettuce, ½ cup cooked quinoa, ½ amount of bell peppers, ¼ cup shredded carrots, and half of the chicken. Top off with chipotle hot sauce. Enjoy!
