Cured Salmon and Creamy Cucumber Dill Salad

Chill time 20 minutes

Ingredients: 

  • 12 slices of organic cured salmon
  • 2 English cucumbers, peeled and cut into thin slices
  • 4 sprigs of dill, off the stem and chopped
  • 1/2 sweet red onion, sliced thinly
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of apple cider vinegar
  • 1/2 cup of vegan greek yogurt
  • Salt and pepper to taste

 

Instructions: 

  1. In a bowl whisk dill, yogurt, olive oil and vinegar
  2. Add in cucumbers and onions
  3. Let chill 20 minutes
  4. Plate salmon and cucumber salad
