Ingredients:
- 12 slices of organic cured salmon
- 2 English cucumbers, peeled and cut into thin slices
- 4 sprigs of dill, off the stem and chopped
- 1/2 sweet red onion, sliced thinly
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of apple cider vinegar
- 1/2 cup of vegan greek yogurt
- Salt and pepper to taste
Instructions:
- In a bowl whisk dill, yogurt, olive oil and vinegar
- Add in cucumbers and onions
- Let chill 20 minutes
- Plate salmon and cucumber salad
