¼ onion, chopped small
4oz (1 cup) mushrooms, chopped small
Pinch of salt
Pinch of black pepper
½ cup black beans
1 teaspoon taco seasoning
¼ red pepper, chopped small
½ avocado, pit removes, peeled, chopped
½ cup lettuce , shredded

- Heat a pan up over medium-high heat. Once hot add oil, onions, mushrooms, salt, and pepper to the pan. Sauté until mushrooms are tender, about 3 minutes. Then add the black beans and taco seasoning. Mis to combine and take off the heat.
- Heat up another pan over medium high heat. Assemble the quesadillas on one half of the tortilla evenly spread the mushroom and black beans, chopped red pepper, avocado, and shredded lettuce. Flip the bare half of the tortilla over the filling part.
- Place the tortilla into the pan and cook on one side for about 2-3 minutes, or until the tortilla is golden brown. Flip and cook for another 2 minutes. Cut into four pieces
