Tuscan Mashed Potatoes

Tuscan Mashed Potatoes (Dairy Free)

Cook time 20 minutes

4 large yellow potatoes, skin on
6 tablespoons of fantastic extra virgin olive oil
Salt TT
Pepper TT
2 heaping tablespoons of chopped Italian parsley
A whisk


  • Boil potatoes, skin on in salted water until they start to break up (about 20 minutes)
  • Peel and cut in to large chunks
  • Place in a bowl and take a large fork and mash your potatoes, ensuring you get out any hard chunks
    • TIP: You’re not trying to make them creamy, you’re just mashing out the chunks
  • In a small bowl mix together all other ingredients to create a deliciously flavored olive oil
  • Whisk your olive oil in to potatoes, taste for salt and serve!
*If you are making this ahead of time, whisk in olive oil mixture after they have been reheated
