Persimmon and Endive Salad

Persimmon and Endive Salad

Serves 2

Cook time 6 minutes

Ingredients:
1 Persimmon fruit 
1/2 Fresh onion 
3 Small Endive Heads  
1 Cucumber 
2 Eggs (soft boiled, 6 minutes)
4 Tablespoons Primal kitchen sesame ginger dressing 
2 tablespoons Extra virgin olive oil 

Instructions:

  • Slice persimmon fruit thinly, skin on
  • Take leaves off of endive head, wash and dry
  • Quarter cucumber into 1 inch pieces
  • Slice onion thinly
  • Put all together and dress with olive oil and dressing, mix well and top with halved eggs
