Ingredients:
4 cups of cleaned green beans
1/2 cup of pistachios
1/2 cup of walnuts
The zest of 1 lemon
1/2 red onion, sliced thinly
Salt and cracked pepper to taste
4 tablespoons of amazing extra virgin olive oil
Salt to taste
Instructions:
- In a food processor pulse pistachios and walnuts until coarsely chopped.
- Sauté in a non-stick pan until toasted, about 3 minutes.
- Drop green beans in boiling, salted water until al dente, about 5 minutes. Strain and dry well.
- Put everything in a bowl and mix well. Serve hot or room temperature.
