Ingredients:
2 beef filets
4 tablespoons of extra virgin olive oil
Maldon salt
4 large eggs
4 scallions, sliced (just the green parts)
Instructions:
- Bring a small pot of water to a boil. Gently drop the eggs in the water and cook for exactly 6 minutes.
- Take the eggs out and let them cool down enough so that you can peel them. Peel the eggs.
- Heat a nonstick pan on medium heat for 2 minutes and add 2 tablespoons of olive oil and filets. For medium rare sear each side for 3 minutes.
- Quarter the eggs and place on top of the filet.
- Top with Maldon salt and serve.
