Ingredients:
2 leeks, sliced ( just the white parts)
3 cups of shredded turkey
1 can of organic pumpkin pure
1 can of organic coconut milk
2 cups of chicken broth
2 tablespoons of curry powder
1 medium spicy chili pepper, sliced
1 bunch of scallions, sliced (just the green parts)
1 bunch of swiss chard, thinly sliced
Salt and fresh cracked pepper to taste
4 tablespoons of extra virgin olive oil
Instructions:
- In a soup pot, add olive oil and leeks. Let the leeks sauté until golden, about 20 minutes.
- Add water if necessary in order to avoid burning or drying out.
- Add swiss chard and sauté until wilted, about 10 minutes.
- Add curry and salt and pepper, stir.
- Add pumpkin pure, coconut milk and broth, stir until smooth.
- Add turkey and simmer about 10 minutes.
- Add scallions and serve.
