Matcha Olive Oil Tea Cakes

Serves 6

Cook time 40 minutes

Ingredients:

  • 1/2 cup of extra virgin olive oil
  • 1/2 cup of coconut cream
  • 1/4 cup of coconut sugar
  • 2 eggs
  • 1 1/2 cups of almond flour
  • 1/2 cup of tapioca flour
  • 2 tablespoons of matcha flour
  • 2 teaspoons of baking powder
  • A pinch of salt 

Instructions:

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, add eggs and sugar and whisk until creamy.
  3. Add all other ingredients and mix well.
  4. Grease small cake tins or muffin tins with a bit of olive oil.
  5. Pour batter into tins.
  6. Bake for 40 minutes or until a toothpick comes out clean.
