Ingredients:
- 1/2 cup of extra virgin olive oil
- 1/2 cup of coconut cream
- 1/4 cup of coconut sugar
- 2 eggs
- 1 1/2 cups of almond flour
- 1/2 cup of tapioca flour
- 2 tablespoons of matcha flour
- 2 teaspoons of baking powder
- A pinch of salt
Instructions:
- Preheat oven to 350 degrees F.
- In a large mixing bowl, add eggs and sugar and whisk until creamy.
- Add all other ingredients and mix well.
- Grease small cake tins or muffin tins with a bit of olive oil.
- Pour batter into tins.
- Bake for 40 minutes or until a toothpick comes out clean.
