Serves 4

Ingredients for Split Pea Soup:
- 1 leek, sliced, just the white parts
- 2 carrots, cubed
- 2 celery ribs, cubed
- 1.5 cups of split peas
- 5 cups of vegetable broth
- 4 tablespoons of olive oil
- Salt and pepper, to taste
Instructions:
- In a soup pot add leek, carrot and celery with olive oil and cook down until wilted
- Add split peas and mix well with vegetables
- Salt and pepper, to taste
- Add broth and let cook, covered for 40 minutes or until peas are completely cooked through
- Blend with a hand blender or in a blender until smooth (if you would like your soup thinner, add more broth until desired consistency is achieved)
- Top with crunchy garnish and serve
Ingredients for Crunchy Garnish:
- 4 slices of bacon, cooked and chopped
- 1/4 cup of almonds, toasted and chopped

5 dates, chopped
Instructions:
- Mix all ingredients together in a bowl and use as a fun topping for your soup
