Split Pea Soup with Crunchy Garnish

Serves 4

Prep time 10 minutes

Cook time 50 minutes 

 

Ingredients for Split Pea Soup:

  • 1 leek, sliced, just the white parts
  • 2 carrots, cubed
  • 2 celery ribs, cubed
  • 1.5 cups of split peas
  • 5 cups of vegetable broth 
  • 4 tablespoons of olive oil 
  • Salt and pepper, to taste

Instructions:

  1. In a soup pot add leek, carrot and celery with olive oil and cook down until wilted 
  2. Add split peas and mix well with vegetables
  3. Salt and pepper, to taste
  4. Add broth and let cook, covered for 40 minutes or until peas are completely cooked through
  5. Blend with a hand blender or in a blender until smooth (if you would like your soup thinner, add more broth until desired consistency is achieved)
  6. Top with crunchy garnish and serve 

Ingredients for Crunchy Garnish:

  • 4 slices of bacon, cooked and chopped
  • 1/4 cup of almonds, toasted and chopped 
  • 5 dates, chopped 

Instructions:

  1. Mix all ingredients together in a bowl and use as a fun topping for your soup
