Ingredients for Trout:
- 1 pound of trout filet, cleaned, skin on
- 2 tablespoons of extra virgin olive oil
- Salt and pepper, to taste
- 4 lemon slices, thin
- 6 sprigs of dill, chopped (for garnish)
- 1 onion, sliced thinly (for garnish)
Instructions for Trout:
- Preheat oven to 375 F
- Lay down a piece of aluminium foil about twice the size of trout filet
- Lay a piece of parchment paper, the same size, on top
- Lay filet down on top and dress with olive oil, salt, pepper and lemon slices
- Close aluminium foil on the sides and at the top so that they are not touching the fish
- Bake for 10 minutes
- Change oven setting to broiler and broil for 3 more minutes or until fish is cooked through
- Top with chopped dill, sliced onion and serve with lemon hemp heart cream
Ingredients for Lemon Hemp Heart Cream:
- 1/4 cup of hemp hearts
- 2 tablespoons of water
- 2 tablespoons of lemon juice
Ingredients for Lemon Hemp Heart Cream:
- Put all ingredients in a blender and blend until smooth and creamy
