Baked Rainbow Trout with Whipped Lemon and Hemp Heart Cream

Baked Rainbow Trout with Whipped Lemon and Hemp Heart Cream

Serves 4
Prep time 10 minutes
Cook time 15 minutes

Ingredients for Trout:

  • 1 pound of trout filet, cleaned, skin on
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper, to taste
  • 4 lemon slices, thin
  • 6 sprigs of dill, chopped (for garnish)
  • 1 onion, sliced thinly (for garnish)

Instructions for Trout:

  1. Preheat oven to 375 F
  2. Lay down a piece of aluminium foil about twice the size of trout filet
  3. Lay a piece of parchment paper, the same size, on top
  4. Lay filet down on top and dress with olive oil, salt, pepper and lemon slices
  5. Close aluminium foil on the sides and at the top so that they are not touching the fish
  6. Bake for 10 minutes
  7. Change oven setting to broiler and broil for 3 more minutes or until fish is cooked through
  8. Top with chopped dill, sliced onion and serve with lemon hemp heart cream 

Ingredients for Lemon Hemp Heart Cream:

  • 1/4 cup of hemp hearts
  • 2 tablespoons of water
  • 2 tablespoons of lemon juice 

Ingredients for Lemon Hemp Heart Cream:

  1. Put all ingredients in a blender and blend until smooth and creamy
