Serves 4-6
Ingredients:
1 lb. boneless skinless chicken thighs
½ head cauliflower cut into florets
2 carrots, cut into circles
½ head broccoli, cut into florets
1-2 tbsp. harissa
Avocado oil cooking spray
¼ tsp. ground cumin
¼ tsp. Ground turmeric
¼ tsp. Smoked paprika
Salt and pepper to taste
3 tbsp. Freshly chopped dill
Instructions:
Preheat oven to 425 degrees, and line a baking sheet with parchment paper
Place the chicken thighs evenly onto one side of the baking sheet. On the other side, add all chopped vegetables. Spray chicken thighs and vegetables with avocado oil cooking spray, and add all seasonings and harissa to the chicken and vegetables. Use your hands to toss and coat everything evenly, or use tongs.
Place into the oven and bake for 30-40 minutes, or until the internal temperature of the chicken reaches 160 degrees.
Garnish with fresh dill. Serve and enjoy!
