6 Eggs, hard boiled
2 tbsp. Primal kitchen chipotle avocado oil mayo
2 tbsp. celery, small diced
2 tbsp. red onion, small diced
½ tsp. dijon mustard
everything but the bagel seasoning
Optional toppings: Diced red onion, capers, chives
Peel all cooked eggs and slice each one in half. Carefully scoop out the yolks with a small spoon. Place the yolks into a small mixing bowl.
Add the mayo, celery, red onion, dijon, and few shakes of everything but the bagel seasoning into the bowl of yolks and mix well. Scoop yolk mixture into each sliced egg white and garnish with extra red onion and everything but the bagel seasoning.
