Dark Chocolate Mango Mousse with Fruit Confetti

Serves 4 
Prep time 10 minutes 
Cooling time 20 minutes

 

Ingredients:

  • 2 cups of cooked sweet potato
  • 1/2 cup of dark cacao powder 
  • 2 tablespoons of maple syrup 
  • 1 mango, peeled and cleaned of pit 

 

Instructions:

  1. Place all ingredients in a blender
  2. Blend slowly until smooth
  3. Place in individual cups and cool for at least 20 minutes 
  4. When ready to serve, top with confetti 


Fruit chutney:

Ingredients:

  • 1/4 cup of strawberries, diced
  • 1/4 cup of blueberries, diced
  • 1/4 cup of mangos, diced

 

Instructions:

  1. Mix all diced fruit together and use as a topping for chocolate mousse
