Cauliflower Pizza Bites with Pesto and Pistachio

Serves 3 (makes 10) 
Prep time 10 minutes 
Cook time 25 minutes 

 

Ingredients:

  • 1 head of par-boiled cauliflower (riced and dried)
  • 2 flax eggs (2 tablespoons of flax meal mixed with 6 tablespoons of water, let rest for 15 minutes)
  • 4 tablespoons of vegan parmesan
  • 6 tablespoons of farina di tapioca
  • 6 tablespoons of almond flour 

 

Instructions:

  1. Preheat oven to 350 degrees F
  2. Place all ingredients into a large mixing bowl and mix well 
  3. Line a baking sheet with parchment paper 
  4. Roll dough into 2-inch balls and place, distanced from each other, on a parchment paper-lined tray
  5. Push down each ball to make small round pizza forms
  6. Bake at 350 degrees F for 25 min or until cooked through and crunchy 

 

Toppings:

Ingredients:

  • 10 tablespoons of Gotham Greens Vegan Pesto  
  • 5 tablespoons of pistachios, chopped 
  • 10 cherry tomato slices 

Instructions:

  1. Spoon one tablespoon of pesto onto each cooked pizza bite and sprinkle with pistachios 
  2. Garnish with cherry tomato slice
