Ingredients:
- 1 head of par-boiled cauliflower (riced and dried)
- 2 flax eggs (2 tablespoons of flax meal mixed with 6 tablespoons of water, let rest for 15 minutes)
- 4 tablespoons of vegan parmesan
- 6 tablespoons of farina di tapioca
- 6 tablespoons of almond flour
Instructions:
- Preheat oven to 350 degrees F
- Place all ingredients into a large mixing bowl and mix well
- Line a baking sheet with parchment paper
- Roll dough into 2-inch balls and place, distanced from each other, on a parchment paper-lined tray
- Push down each ball to make small round pizza forms
- Bake at 350 degrees F for 25 min or until cooked through and crunchy
Toppings:
Ingredients:
- 10 tablespoons of Gotham Greens Vegan Pesto
- 5 tablespoons of pistachios, chopped
- 10 cherry tomato slices
Instructions:
- Spoon one tablespoon of pesto onto each cooked pizza bite and sprinkle with pistachios
- Garnish with cherry tomato slice
