Gazpacho Style Watermelon Soup

Serves 6-8


¼ seedless watermelon, cut into chunks

1 red onion

½ english cucumber, cut into chunks

2 beefsteak tomatoes, cut into chunks

½ red bell pepper, seeds removed and cut into chunks

1 tbsp. red wine vinegar

1 tbsp. Extra virgin olive oil

¼ red onion, cut into chunks

1 tbsp. Lime juice

1 scoop collagen peptides

2 tbsp. Fresh mint leaves

Salt and pepper to taste

Optional garnishes: diced red onion, bell pepper, and mint leaves


Place all ingredients into a high speed blender and blend until smooth. Taste and adjust seasoning as desired before serving. Garnish, and serve!
