Gluten free, Vegan Kimchi Pancakes

Gluten free, Vegan Kimchi Pancakes

Serves 4

Cook time 6 minutes

Ingredients:

  • 1 cup of chickpea flour
  • 1 cup of water
  • 1 cup of mama o’s vegan kimchi, chopped
  • 2 tablespoons of kimchi brine
  • 1 scallion, sliced
  • 2 tablespoons of extra virgin olive oil + 2 for cooking
  • 1 tablespoons of sesame seeds (for garnish)
  • 2 tablespoons of coconut aminos (for dipping)

Instructions:

  1. Mix together flour and water until smooth
  2. Add all other ingredients except sesame seeds
  3. Heat a nonstick pan until warm
  4. Add 2 tablespoons of olive oil and then batter to pan
  5. Tip pan in a circular motion in order to spread the batter around the pan, resulting in what looks like a pancake
  6. Cook for 3 minutes on each side or until cooked and crunchy, flip and repeat
