Ingredients:
- 1 cup of chickpea flour
- 1 cup of water
- 1 cup of mama o’s vegan kimchi, chopped
- 2 tablespoons of kimchi brine
- 1 scallion, sliced
- 2 tablespoons of extra virgin olive oil + 2 for cooking
- 1 tablespoons of sesame seeds (for garnish)
- 2 tablespoons of coconut aminos (for dipping)
Instructions:
- Mix together flour and water until smooth
- Add all other ingredients except sesame seeds
- Heat a nonstick pan until warm
- Add 2 tablespoons of olive oil and then batter to pan
- Tip pan in a circular motion in order to spread the batter around the pan, resulting in what looks like a pancake
- Cook for 3 minutes on each side or until cooked and crunchy, flip and repeat
