Asian Inspired Carrot and Parsnip Meatless Meatballs

Asian Inspired Carrot and Parsnip Meatless Meatballs

Serves 4 

Prep time 10 minutes

Cook time 15 minutes

Ingredients:

  • 1 cup of carrots, sliced
  • 1 cup of parsnip, sliced
  • 2 blocks of hard tofu, strained 
  • 3 tablespoons of ginger, minced
  • 3 tablespoons of cilantro, minced 
  • 1/2 clove of garlic
  • 1/2 cup of cashews 
  • 2 eggs

Instructions:

  1. Preheat oven to 350 degrees F 
  2. Place all ingredients in a food processor and process until smooth  
  3. Spoon out a heaping spoonful of mixture and using your hands, roll into 2 inch balls
  4. Place on a parchment paper lined baking sheet ensuring they are separated enough so as not to stick 
  5. Bake for 15 minutes
