*this recipe is designed for thin crepe-like pancakes
INGREDIENTS:
- 1 1/2 cups almond milk
- 1 1/2 cups of almond flour
- 2/3 cup of tapioca flour
- 3 eggs
- 2 tablespoons of maple syrup
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of cardamom
- A pinch of salt
- 1 cup of blueberries
- 1/2 cup of walnuts, chopped
- Coconut oil or avocado oil spray (for cooking)
INSTRUCTIONS:
- In a mixing bowl crack eggs and add maple syrup
- Mix well
- Add almond milk and mix well
- Add all flours, baking powder and soda
- Mix well until batter is uniform and smooth
- Add fruit and walnuts
- On a non stick pan or a griddle spray cooking oil and ladle batter on to pan to form pancake
- Let cook until golden on one side, flip and repeat
- Repeat until batter is finished
