Blueberry and Walnut Cardamom Pancakes

*this recipe is designed for thin crepe-like pancakes

INGREDIENTS:

  • 1 1/2 cups almond milk
  • 1 1/2 cups of almond flour
  • 2/3 cup of tapioca flour
  • 3 eggs
  • 2 tablespoons of maple syrup
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of cardamom
  • A pinch of salt
  • 1 cup of blueberries
  • 1/2 cup of walnuts, chopped
  • Coconut oil or avocado oil spray (for cooking)

INSTRUCTIONS:

  1. In a mixing bowl crack eggs and add maple syrup
  2. Mix well
  3. Add almond milk and mix well
  4. Add all flours, baking powder and soda
  5. Mix well until batter is uniform and smooth
  6. Add fruit and walnuts
  7. On a non stick pan or a griddle spray cooking oil and ladle batter on to pan to form pancake
  8. Let cook until golden on one side, flip and repeat
  9. Repeat until batter is finished
