Almond and Pear Breakfast Cake

Almond and Pear Breakfast Cake

Serves 4
Prep time 10 minutes
Cook time 45 minutes 

INGREDIENTS:

  • 3 cups of almond flour
  • 3 eggs
  • 3 tablespoons of maple syrup
  • 1/2 cup almond milk
  • 2 teaspoons of baking powder
  • A pinch of salt
  • 1/4 cup of extra virgin olive oil
  • 2 large pears, peeled and sliced thinly  
  • Coconut oil baking spray 

INSTRUCTIONS:

  1. Preheat oven to 350 degrees F
  2. In a mixing bowl, add all ingredients and mix well
  3. Spray cake mould with coconut oil baking spray
  4. Pour batter into mould and bake in oven for 45 minutes or until cooked through
