Spring Kale Salad with Walnuts

Serves 4 
Prep time 10 minutes

Ingredients:

  • 1 large bunch of kale, stemless
  • 1/4 a cup of walnuts, toasted
  • 4 tablespoons of hemp hearts
  • 4 tablespoons of pomegranate seeds

Vegan Caesar dressing:

  • 1/4 cup of chickpeas
  • 2 tablespoon of grass-fed parmesan *for vegan option use Violife vegan parmesan
  • 1 teaspoon of mustard
  • 3 tablespoons of lemon juice
  • 2 teaspoons of capers
  • 1/2 teaspoon of garlic powder
  • 1 tablespoons of maple syrup
  • 2 tablespoons of extra virgin olive oil
  • Salt and Coarse pepper, to taste

Instructions:

  1. Slice kale and place in a large mixing bowl
  2. Add salt and massage until more tender
  3. Add walnuts, pomegranate and hemp hearts
  4. Dress and mix well 

Dressing:

  1. Put everything in a blender and blend until smooth. If you need to thin it, slowly add hot water until desired consistency is achieved
