Egg Fritatta

4 eggs

1 tablespoon condensed coconut milk

½ teaspoon salt

Pinch of black pepper

½ cup fresh spinach leaves, chopped

¼ cup cherry or grape tomatoes, cut in half

Coconut cooking spray


  • In a small mixing bowl whisk together eggs and condensed coconut milk. Season with salt and pepper.
  • Spray your microwave safe bowl with cooking spray. Add the chopped spinach and tomatoes. Pour the egg mixture into the bowl. Mixing to distribute the veggies.
  • Cook uncovered in the microwave for 5 minutes or until the center is cooked. Enjoy right away!
