Ingredients

  • 1 sweet potato, cooked, peeled and cut into slices
  • 4 large handfuls of baby spinach
  • 1 English cucumber, diced
  • 8 radishes, quartered
  • 1 whole beat, cubed
  • 4 tablespoons of linen seeds
  • 4 tablespoons of sunflower seeds
  • 4 eggs, hard-boiled
  • A pinch of flaky salt

Instructions

  1. Divide all ingredients between two bowls and top with lime dressing

Ingredients
Lime dressing:

  • 2 tablespoons of amazing extra virgin olive oil
  • The juice of 1 lime
  • 1 teaspoons of dijon mustard
  • 2 teaspoons of local honey
  • Salt and pepper to taste

  1. Place everything in a mason jar, shake and use
