Serves 2-4

Ingredients:
- 1 pound of shrimp, cleaned and deveined
- 2 cups of cherry tomatoes
- 1 cup of zucchini, sliced
- 1/2 cup of olives, free from pits
- 2 cloves of garlic, minced
- 4 tablespoons of extra virgin olive oil
- 1 medium spiced chili pepper
- 1/4 cup of torn basil leaves
- 1/4 cup of toasted pine nuts
- Salt and pepper to taste
Instructions:
- In a medium sized skillet add garlic, chili and 2 tablespoons of olive oil
- Cook until garlic is golden
- Add 1 glass to water to stop garlic from burning
- Add cherry tomatoes, zucchini and olives
- Let cook down until tender but not over cooked
- Place sauce in a bowl, wipe clean pan with a paper towel
- Heat skilled until hot, about 3 minutes
- Add 2 tablespoons of olive oil and add shrimp
- Let shrimp sear on each side, about 2 minutes per side
- Add sauce back in to pan and cook just until shrimp is cooked through, about 5 minutes
- Salt and pepper to taste
