Roasted Turkey and Sweet Potato Croquettes

Ingredients

  • 2 cups of roasted turkey, off the bone
  • 1 cup of cooked sweet potatoes, skinless
  • 2 eggs
  • 2 teaspoons of nutmeg
  • 2 tablespoons of cashew cream cheese
  • 1/4 cup of scallions
  • Salt and pepper to taste

 

Instructions

  1. Preheat oven to 375 degrees
  2. Place all ingredients in a food processor or blender
  3. Blend until smooth
  4. Spoon 2 inch balls from mixture on a parchment paper lined baking sheet, so they are slightly separated
  5. Bake in oven for 25 minutes (or in an air fryer for 6 minutes)
  6. Serve with dill sauce

  • 1 cup of vegan greek yogurt
  • 1/4 cup of dill, chopped
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
