Ingredients
2 cans wild caught salmon
2 ribs celery
¼ C red onion, finely diced
1 red bell pepper, finely diced
½ lemon, juiced
2 tbsp fresh flat leaf parsley, chopped
2 tbsp avocado oil mayo
Few splashes of coconut aminos
¼ avocado, sliced
Salt and pepper to taste
Few handfuls of mixed greens
4-6 nori sheets
Optional add-ins: thinly sliced cucumbers, bell peppers, sprouts,
Instructions
Drain the canned salmon and add to a medium sized mixing bowl. Add all ingredients except for the avocado, mixed greens, and nori sheets and mix well.
Place a sheet of nori onto a flat surface and add about ¼ C of the salmon mixture to one side. Add a few pieces of sliced avocado and as many mixed greens as desired and roll like you would a sushi hand roll. Place seam side down and repeat until you run out of the salmon mixture. Eat immediately!
