Serves: 2-4
Ingredients:
2 14 oz. cans of chickpeas, drained and rinsed
½ C red onion, finely diced
1 C celery, finely diced
¼ C avocado oil mayo
2 tbsp. Fresh lemon juice
1 tbsp. Curry powder
1 tsp. Ground turmeric
¼ C fresh cilantro, chopped
2-3 tbsp. Roasted cashews, chopped
Salt and pepper to taste
Instructions:
In a large bowl, add the chickpeas and mash with a fork until pieces break apart and are mostly mashed.
Add all remaining ingredients and mix well. Taste, and adjust seasonings as desired. Serve with extra cilantro and cashews on top and enjoy! This pairs well on top of a salad, inside a wrap, or by itself!
