Beet and Pomegranate Salad

Serves 4
Prep time 5 minutes

3 tablespoons Soft goat cheese 
4 cups (chopped) Fresh Spinach 
2 big or 3 small Beets (whole) 
2 tablespoons Flax seeds 
Primal Kitchen honey mustard dressing to taste
Salt and pepper to taste


  • Cut beets into 4
  • In a large mixing bowl toss beets, seeds and spinach with dressing
  • Salt and pepper to taste
  • Plate and top with dollops of goat cheese
