Ingredients:
8 sweet peppers, 4 inches long or smaller (something like Golden Greek Peperocini works well because it's easy to stuff)
1 dollop of spreadable goat cheese
4 tablespoons of cooked quinoa
¼ teaspoon Cayenne pepper
4 pieces of bacon
Instructions:
- Mix quinoa with goat cheese and sprinkle with cayenne pepper to taste, depending on how spicy you want your poppers
- Slice your pepper in half, starting from halfway down your pepper
- Spoon mixture on both sides of the pepper and close
- Wrap half a slice of bacon around your stuffed pepper
- Cook in the oven on parchment paper at 375 degrees for 30 minutes
