Roasted Asparagus with Romesco Dip

Asparagus Ingredients:
1 bunch of asparagus (peeled with a peeler from the middle down)
2 tablespoons of olive oil
Salt to taste


  • Preheat oven to 400 degrees
  • Line a baking sheet with parchment paper.
  • Lay asparagus down on the sheet, and spread out.
  • Drizzle olive oil and salt to taste.
  • Bake 10 minutes or until golden.

Dip Ingredients:
1/4 cup of sun-dried tomatoes
1/4 cup roasted sweet red peppers
1/4 red wine vinegar
1/4 teaspoon of salt
1/4 teaspoon of cayenne pepper
1/2 teaspoon of smoked paprika
2/3 cup almond butter
3/4 cup of extra virgin olive oil


  • Preheat oven to 400 degrees
  • Line a baking sheet with parchment paper and lay red pepper down.
  • Roast for about 20 minutes until completely cooked through. Clean out seeds.
  • Put all dip ingredients in a food processor and blend until smooth.
  • Serve asparagus and dip together!
