Steamed Artichokes with Salsa Verde

Artichoke Ingredients:
4 large globe artichokes
1 lemon

  • Take the first layer of hard artichoke leaves off of the outside.
  • Cut off the small stem so that later you can sit your artichoke UP.
  • In a steamer pot, add a halved lemon and fill with water. Insert steaming basket.
  • Place your artichokes in the basket, cover and steam for about 40 minutes or until tender.
  • When your artichokes are ready, sit them up, spread the leaves, and gently open your artichoke.
  • Salt lightly and spoon salsa verde into artichoke. Try to get it on the inside of the leaves as much as you can.

Salsa Verde Ingredients:
2 bunches of Italian parsley (stems off)
1 tablespoon of capers
2 anchovy filets
3 dill pickles
1 hard-boiled egg (about 8 minutes)
2 tablespoons of apple cider vinegar
1 small garlic clove
1/2 cup of fantastic extra virgin olive oil


  • Put everything except olive oil in a food processor and blend until smooth, slowly adding olive oil as you blend.
