Tex Mex Protein Bowl

Tex Mex Protein Bowl

Serves 1

Prep time 10 minutes

Ingredients:

  • 3 eggs
  • 4 tablespoons of extra virgin olive oil 
  • 2 slices of bacon, cooked
  • 2 tablespoons of organic sheep’s cheese feta
  • 1/4 avocado, sliced 
  • 1/2 cup of cherry tomato, cubed
  • 1 scallion, sliced 
  • 1/2 lime
  • 1 teaspoon of tabasco 
  • 1/2 cup of yellow bell pepper, sliced 
  • 2 tablespoons of cilantro, chopped  

Instructions:

  1. Heat a non stick pan to medium low heat
  2. Place 1/2 of lime, seed side down on pan and leave until charred, about 2 minutes 
  3. Remove lime and put to the side
  4. Add 2 tablespoons of olive oil to the pan and crack eggs into it 
  5. Scramble until cooked through, remove
  6. In a bowl, place all veggies, herbs and feta 
  7. Top with egg
  8. Sprinkle with 2 tablespoons of olive oil and tabasco
  9. Squeeze charred lime on top and enjoy
