Serves 1
Prep time 10 minutes
Ingredients:
- 3 eggs
- 4 tablespoons of extra virgin olive oil
- 2 slices of bacon, cooked
- 2 tablespoons of organic sheep’s cheese feta
- 1/4 avocado, sliced
- 1/2 cup of cherry tomato, cubed
- 1 scallion, sliced
- 1/2 lime
- 1 teaspoon of tabasco
- 1/2 cup of yellow bell pepper, sliced
- 2 tablespoons of cilantro, chopped
Instructions:
- Heat a non stick pan to medium low heat
- Place 1/2 of lime, seed side down on pan and leave until charred, about 2 minutes
- Remove lime and put to the side
- Add 2 tablespoons of olive oil to the pan and crack eggs into it
- Scramble until cooked through, remove
- In a bowl, place all veggies, herbs and feta
- Top with egg
- Sprinkle with 2 tablespoons of olive oil and tabasco
- Squeeze charred lime on top and enjoy
