Strawberry & Cream Muffins

Cook time 30 minutes

Ingredients:

  • 2 cups almond flour
  • 5 tablespoons tapioca flour
  • 2 tablespoons of coconut sugar
  • 1 teaspoon baking soda
  • 1 tablespoon of psyllium husk
  • 1/2 teaspoon of salt
  • 1.5 cups of strawberries
  • 4 tablespoons of coconut oil
  • 2 eggs
  • 1 cup of coconut milk
  • 2 tablespoons of coconut yogurt

Instructions:

  1. Preheat oven to 350
  2. Mix together all wet ingredients in a large bowl
  3. Add in all dry ingredients and mix well
  4. Spray muffin cups, ensuring to get the sides as well
  5. Fill muffin tins up half way
  6. Bake in the oven for 30 minutes
