Ingredients:
4-6 oz soba noodles
1 bunch of cooked Swiss chard
4 soft boiled eggs (6 minutes), peeled and halved
1 bunch of scallions, thinly sliced
2 tablespoons of sesame seeds, toasted
1/2 tablespoon of freshly grated ginger
1/2 cup of sliced mushrooms (we like Shitaki)
1 sprig of lemon grass
5 cups of Dr Kellyann’s bone broth
Instructions:
- In a pot, add lemon grass, ginger and broth. Bring to a simmer, covered.
- Add soba noodles and mushrooms and let simmer until they are cooked, about 8 minutes
- Add the rest of your ingredients and when hot, plate and top with soft boiled eggs.
