Slow Cooked Turkey Ginger Turmeric Chili

Serves 8

Cook time 4-6 hours

Ingredients:
2 cans of organic low sodium chicken broth
3 pounds of ground turkey
1 whole white onion
1/2 cup of cannellini beans
1 jalapeño
1 small can of chipotle in adobe
1 green pepper (chopped)
2 zucchine (cut into zoodles)
1 sweet potato, peeled
2 cups of frozen spinach
3 tablespoons of extra virgin olive oil
2 tablespoons of turmeric
2 tablespoons of freshly ground ginger
1 tablespoon of cumin
1 tablespoon of salt
1 chopped garlic clove

Instructions:

  • In a food processor, blend chicken broth, turmeric, ginger, cumin, salt, and garlic clove. Set aside
  • In a non stick pan, sauté onion until cooked through (about 10 minutes)
  • Add ground turkey and cook at medium heat until golden (but not dried out)
  • Add to slow cooker
  • Add all other ingredients to slow cooker except sweet potato and zoodles (add those 30 minutes before end cooking time)
  • Cook in slow cooker on high for 4-6 hours
  • *If you need to thicken the chili at the end, whisk together 1 tablespoon of tapioca flour with a little bit of water and add to chili at the very end
