Ingredients for Sweet Potato Salad:
3 large sweet potatoes, cubed into 1/2 inch pieces
3 celery ribs, diced
1/4 cup of almonds, toasted and coarsely chopped
1 fresh red onion, sliced thin
4 thinly sliced sun-dried tomatoes (optional)
Cracked pepper
Salt to taste
6 slices of cooked bacon, chopped
Ingredients for Dressing:
1 tablespoons of dijon mustard
2 teaspoons of honey
1/2 teaspoon of cumin
1 tablespoon of red wine vinegar
2 tablespoons of extra virgin olive oil
4 tablespoons of dairy free greek yogurt
Salt to taste
- Bake sweet potatoes in preheated oven at 300 for 15 minutes or until cooked through
- Salt to taste
- Half way through, add bacon and bake until cooked through and crunchy.
- Chop bacon
- Place in large mixing bowl and add all dry ingredients
- Add dressing and mix well
