Ingredients for Blackened Halibut:
1 pound of halibut (2 fillets)
2 tablespoons of blackening seasoning
3 tablespoons of olive oil
Instructions:
- Put blackening seasoning on a plate and dip filets in seasoning
- Heat iron skillet or non stick pan on high heat for about 3 minutes, until its smoking
- Turn down heat to medium, add olive oil and quickly add seasoned fillets
- Sear until golden on each side (about 3 minutes per side), turn down heat to low and finish cooking (about 2 minutes)
*try not to turn fish numerous times or it will start to break up
- Plate and top with salsa
Ingredients for Mango Salsa:
1 small ripe mango
10 cherry tomatoes, quartered
1 tablespoon of lime juice
2 teaspoons of chopped cilantro
2 tablespoons of chopped fresh onion
1/2 avocado, cubed
1/2 cubed cucumber
1/2 jalapeno minced
Salt TT
2 tablespoons of extra virgin olive oil
Instructions:
- Mix all together and let sit for 20 minutes
