Sirloin + Root Vegetables

Serves 4


1 cup canned artichoke hearts, drained, halved

1 sweet potato medium (about 1 ½ cups), chopped

3 cups broccoli, chopped

To taste sea salt & black pepper

1 teaspoon garlic powder

1 tablespoon olive oil or avocado oil

1 lb sirloin steak, cut into 4 4oz steaks  


Preheat the oven to 400 degrees.

Toss the artichokes, sweet potatoes, and broccoli with the oil, salt, and pepper until well coated. Add everything to a large baking sheet.

Season each side of the steaks with salt and pepper. Then nestle the steaks in the pan. Bake in the oven for 20 minutes or until vegetables are browning and steak is cooked to desired doneness.

Evenly divide the steak and veggies between plates. Enjoy!
