Serves 4

Chill time 20 minutes
Ingredients:
- 2 scallions, sliced
- 2 cucumbers, cubed
- 1/2 cup of cilantro, chopped, just the leaves
- 2 avocados, peeled, pitted and cubed
- 3 pounds of shrimp, steamed and cleaned
- 1 jalapeno, sliced
- The juice of 2 limes
- 1 slightly under ripe mango, peeled pitted and cubed
- 1 cup of cherry tomatoes, quartered
- 4 tablespoons of extra virgin olive oil
- Salt and fresh cracked pepper TT
Instructions:
- Slice shrimp into 1/4 inch pieces
- In a large mixing bowl add all ingredients and let chill for 20 minutes
- Serve chilled
