Ingredients:
- 1 cup of quinoa, cooked
- 2 lbs of squash *You can use all different types of squash for this (butternut, pumpkin, zucchini, yellow squash
- Salt to taste
Instructions:
- Preheat oven to 375 degrees
- On a parchment paper lined baking sheet, spread out quinoa
- Bake for 15 minutes or until crunchy
- Peel, if you have chosen butternut or pumpkin, and cut into 1 inch cubes
- Lay on a parchment paper lined tray and spread squash around
- Salt lightly
- In a preheated oven bake at 350 for 15 minutes or until cooked through
- Place in a bowl and toss with quinoa
- Dress with tahini basil sauce
Tahini basil sauce
1/4 cup of basil leaves
2 tablespoons of tahini
3 tablespoons of extra virgin olive oil
1/4 cup of warm water
2 tablespoons of lemon juice
1 teaspoon of honey
1/2 teaspoon of cayenne pepper
Salt TT
Instructions:
- Put everything in a blender and blend until smooth
- Add more warm water if necessary to achieve a creamy consistency
