Banana bites with cashew butter

1 banana, sliced into 1/2 inch slices
2 tablespoons of cashew butter

  • Spread a bit of cashew butter on a banana slice and top with another banana slice. Repeat

Apple rounds with a cashew cream cheese and berries and nuts
Serves 2
Prep time 4 minutes

1 large crunchy apple
4 tablespoons of miyokos cashew cream cheese
1/2 cup of child’s favorite berries
2 tablespoons of mixed nuts
1 tablespoon of fresh coconut flakes

  • Slice an apple across the bias in a one inch slice, remove core
  • Spread a thick layer of cashew cream cheese on top
  • Top with berries, nuts and fresh coconut flakes

Avocado and cucumber sushi with carrot caviar
Serves 2
Prep time 5 minutes

2 siete tortillas
1 avocado, smashed
1 cucumber, sliced into thin sticks
1 handful of shredded carrot sticks, chopped

  • Slice tortillas in half
  • Spread avocado over both halves of tortilla
  • Lay 4 cucumber sticks down on each half of tortilla
  • Roll tightly
  • Slice into 2 inch rolls
  • Top with chopped carrot
