Roasted Beet Dip

Roasted Beet Dip

Serves 4

Prep time 5 minutes

Cook time 20 minutes

Ingredients:

  • 2 onions, cut into large cubes 
  • 2 carrots, cut into 4
  • 2 beets, cooked and cubed 
  • 1 can of chickpeas
  • Salt and pepper to taste
  • 4 tablespoons of olive oil 

Instructions:

  1. Preheat oven to 350 degrees F
  2. Place all vegetables on a parchment paper lined baking sheet
  3. Add salt and pepper and 2 tablespoons of olive oil
  4. Bake for 20 minutes or until vegetables are cooked through 
  5. Place all ingredients in a blender, add olive oil and blend until smooth 
  6. Use as a dip for veggies or a protein
