Serves 4

Cook time 20 minutes
Ingredients:
- 2 onions, cut into large cubes
- 2 carrots, cut into 4
- 2 beets, cooked and cubed
- 1 can of chickpeas
- Salt and pepper to taste
- 4 tablespoons of olive oil
Instructions:
- Preheat oven to 350 degrees F
- Place all vegetables on a parchment paper lined baking sheet
- Add salt and pepper and 2 tablespoons of olive oil
- Bake for 20 minutes or until vegetables are cooked through
- Place all ingredients in a blender, add olive oil and blend until smooth
- Use as a dip for veggies or a protein
