Coconut & Turmeric Cauliflower Soup

Coconut & Turmeric Cauliflower Soup

Serves 4

Prep time 15 minutes

Ingredients:

  • 1 large cauliflower, cut into florets
  • 1 large onion, sliced
  • 4 tablespoons of olive oil 
  • 1 cup of coconut milk 
  • 1 cup of vegetable broth
  • 2 tablespoons of tomato concentrate 
  • 3 tablespoons of turmeric 
  • 5 sprigs of cilantro 
  • The juice of 1 lemon 
  • Salt and pepper to taste

Instructions:

  1. In a medium soup pot, add olive oil and onion 
  2. Let onion cook down until wilted, about 5 minutes
  3. Add tomato concentrate and cauliflower florets and stir well
  4. Salt and pepper to taste
  5. Add turmeric, vegetable broth, coconut milk  and cilantro and cover until cauliflower are completely cooked through and almost falling apart
  6. Blend soup, add lemon juice and check for salt and pepper
