Serves 4
Prep time 15 minutes
Ingredients:
- 1 large cauliflower, cut into florets
- 1 large onion, sliced
- 4 tablespoons of olive oil
- 1 cup of coconut milk
- 1 cup of vegetable broth
- 2 tablespoons of tomato concentrate
- 3 tablespoons of turmeric
- 5 sprigs of cilantro
- The juice of 1 lemon
- Salt and pepper to taste
Instructions:
- In a medium soup pot, add olive oil and onion
- Let onion cook down until wilted, about 5 minutes
- Add tomato concentrate and cauliflower florets and stir well
- Salt and pepper to taste
- Add turmeric, vegetable broth, coconut milk and cilantro and cover until cauliflower are completely cooked through and almost falling apart
- Blend soup, add lemon juice and check for salt and pepper
