Pumpkin Spiced Cheesecake Chia Pudding

Chill time 2-4 hours 

Ingredients:

Chia layer:

  • 1/2 cup of cashew milk 
  • 1/2 cup of organic pumpkin puree
  • 1/4 cup of chia seeds
  • 1 teaspoon of pumpkin pie spice 
  • 2 teaspoons of maple syrup 

Cream layer:

  • 1/2 cup of Kite Hill vegan cream cheese
  • 1/4 cup of almond milk 
  • 1 teaspoon of vanilla extract

Instructions:

  1. Mix all ingredients together 
  2. In single serving jar, add 1 layer of chia mixture, 1 layer of cream mixture and top with another layer of chia mixture
  3. Cover and let chill 2-4 hours in the fridge
