Serves 4

Cook time 20 minutes
Ingredients:
- 1 leek, sliced, just the white part
- 6 carrots, cubed into 1 inch cubes
- 2 white turnips, cubed into 1 inch cubes
- 4 tablespoons of olive oil
- 1 tablespoon of turmeric
- 1 roasted chicken, pulled, skin off
- 1 cup of cashew milk
- 1 cup of organic bone broth
- 1 cup of split lentils
- Salt and pepper to taste
Instructions:
- In a medium sized pot, add olive oil and leeks and let caramelize, add a bit of water if necessary to avoid burning or drying out
- Add carrots, turnips, turmeric, lentils and salt and pepper
- Sauté for a few minutes
- Add cashew milk and bone broth and let cook covered for 10 minutes or until vegetables and lentils are cooked through
- Add chicken and enjoy
