White Turmeric Chicken Chowder with Lentils and Root Vegetables

Serves 4

Prep time 15 minutes

Cook time 20 minutes

Ingredients:

  • 1 leek, sliced, just the white part
  • 6 carrots, cubed into 1 inch cubes
  • 2 white turnips, cubed into 1 inch cubes
  • 4 tablespoons of olive oil 
  • 1 tablespoon of turmeric
  • 1 roasted chicken, pulled, skin off
  • 1 cup of cashew milk 
  • 1 cup of organic bone broth 
  • 1 cup of split lentils
  • Salt and pepper to taste

Instructions:

  1. In a medium sized pot, add olive oil and leeks and let caramelize, add a bit of water if necessary to avoid burning or drying out
  2. Add carrots, turnips, turmeric, lentils and salt and pepper
  3. Sauté for a few minutes
  4. Add cashew milk and bone broth and let cook covered for 10 minutes or until vegetables and lentils are cooked through 
  5. Add chicken and enjoy
