Serves 4
Prep time 10 minutes
- 1 cup of blueberries
- 1/2 cup of almond meal
- 2 tablespoons of nut butter (we used cashew)
- 6 tablespoons of dried coconut
Instructions:
- Put blueberries, almond meal and nut butter into a food processor and pulse until dough is formed, about 3 minutes.
- Form 2 inch balls of dough and roll in coconut
- Keep in an airtight container in the fridge for up to 2 days
