Ingredients:
- 1.5 cups of organic frozen cauliflower rice
- 1 teaspoon of rice vinegar
- 4 tablespoons of coconut aminos
- 4 tablespoons of white sesame seeds
- 4 tablespoons of black sesame seeds
- 1 tablespoon of grated ginger
- 2 teaspoons of sesame oil
- 1 pound of sushi grade salmon
- 4 tablespoons of carrots, shredded
- 10 radishes, sliced
- 1 avocado, cubed
- 2 cucumbers, cubed
- 2 scallions, sliced, just the green parts
- 1 tablespoons of Maldon Salt
Instructions:
- Heat a medium, non stick pan on medium heat
- Add cauliflower rice and let excess water reduce and rice to cook through, about 10 minutes. Let cool
- Dress rice with rice vinegar and sesame oil
- Place rice in serving dish
- Slice salmon thinly, like sashimi
- Top rice with salmon and all vegetables
- Sprinkle sesame seeds, coconut aminos and Maldon Salt
