Poke Bowl with Cauliflower Rice

Serves 4

Ingredients:

  • 1.5 cups of organic frozen cauliflower rice 
  • 1 teaspoon of rice vinegar 
  • 4 tablespoons of coconut aminos 
  • 4 tablespoons of white sesame seeds 
  • 4 tablespoons of black sesame seeds 
  • 1 tablespoon of grated ginger 
  • 2 teaspoons of sesame oil 
  • 1 pound of sushi grade salmon
  • 4 tablespoons of carrots, shredded 
  • 10 radishes, sliced  
  • 1 avocado, cubed
  • 2 cucumbers, cubed
  • 2 scallions, sliced, just the green parts 
  • 1 tablespoons of Maldon Salt 

Instructions:

  1. Heat a medium, non stick pan on medium heat
  2. Add cauliflower rice and let excess water reduce and rice to cook through, about 10 minutes. Let cool
  3. Dress rice with rice vinegar and sesame oil   
  4. Place rice in serving dish
  5. Slice salmon thinly, like sashimi  
  6. Top rice with salmon and all vegetables 
  7. Sprinkle sesame seeds, coconut aminos and Maldon Salt
