Zucchini, Mint and Soft Goat Cheese Egg Cup

Ingredients:

  • 2 large zucchini, sliced into ribbons
  • 2 tablespoons of scallions, sliced
  • 4 tablespoons of soft goat cheese
  • 4 mint leaves, sliced 
  • 2 tablespoons of extra virgin olive oil
  • 4 eggs
  • Muffin tins or silicon muffin tray

Instructions:

  1. Preheat oven to 400 degrees
  2. Salt and pepper zucchini, to taste
  3. Break eggs in a bowl and scramble
  4. Spray muffin tins with cooking spray
  5. Distribute egg mixture evenly into tins filling them up half way
  6. Distribute zucchini, scallions, mint leaves and cheese evenly amongst tins and bake for 10 minutes or until done
