Ingredients:
- 2 large zucchini, sliced into ribbons
- 2 tablespoons of scallions, sliced
- 4 tablespoons of soft goat cheese
- 4 mint leaves, sliced
- 2 tablespoons of extra virgin olive oil
- 4 eggs
- Muffin tins or silicon muffin tray
Instructions:
- Preheat oven to 400 degrees
- Salt and pepper zucchini, to taste
- Break eggs in a bowl and scramble
- Spray muffin tins with cooking spray
- Distribute egg mixture evenly into tins filling them up half way
- Distribute zucchini, scallions, mint leaves and cheese evenly amongst tins and bake for 10 minutes or until done
