Ingredients:
- 1/2 cup of cashew butter
- 2 tablespoons of macademia nuts, coarsely chopped
- 2 tablespoons of coconut sugar
- 4 tablespoons of coconut oil
- 2 cups of almond flour
- 1/4 cup of tapioca flour
- 2 tablespoons of matcha powder
- 1/2 teaspoons of baking powder
- 1 egg
- A pinch of baking soda
- A pinch of salt
- 1/2 cup of dark chocolate
Instructions:
- Preheat oven to 350 degrees
- Mix all ingredients together, except dark chocolate
- Roll your dough out and cut cookies with a cookie cutter
- Lay cookies on a parchment paper lined baking sheet
- Bake for 15 minutes in the oven
- When cookies are done and cooled, microwave chocolate for 3 minutes or until melted
- Dip cookies into melted chocolate and lay down on a parchment paper lined plate
- Place cookies in refrigerator and let chocolate set, about 20 minutes
