SWW® Chocolate Dipped Matcha Cookie

SWW® Chocolate Dipped Matcha Cookie

Serves 6

Rest time 20 minutes 

Ingredients:

  • 1/2 cup of cashew butter
  • 2 tablespoons of macademia nuts, coarsely chopped
  • 2 tablespoons of coconut sugar 
  • 4 tablespoons of coconut oil 
  • 2 cups of almond flour 
  • 1/4 cup of tapioca flour 
  • 2 tablespoons of matcha powder 
  • 1/2 teaspoons of baking powder 
  • 1 egg
  • A pinch of baking soda 
  • A pinch of salt 
  • 1/2 cup of dark chocolate

Instructions:

  1. Preheat oven to 350 degrees
  2. Mix all ingredients together, except dark chocolate 
  3. Roll your dough out and cut cookies with a cookie cutter
  4. Lay cookies on a parchment paper lined baking sheet
  5. Bake for 15 minutes in the oven
  6. When cookies are done and cooled, microwave chocolate for 3 minutes or until melted
  7. Dip cookies into melted chocolate and lay down on a parchment paper lined plate
  8. Place cookies in refrigerator and let chocolate set, about 20 minutes
