Ingredients:
- 3 eggs, beaten
- 1 teaspoon condensed coconut milk
- ¼ teaspoon salt
- Pinch of black pepper
- Avocado cooking spray
- 1 English muffin, toasted
- Hot sauce, optional
- 1 tablespoon of scallions, sliced
Instructions:
- In a small bowl whisk the egg, condensed coconut milk, scallions and salt and pepper.
- Cover the dish with a paper towel, or lid for bowl and microwave on high for 1 minute and 30 seconds. Meanwhile, toast your English muffin.
- Remove bowl from microwave and loosen egg with spoon or rubber spatula around the edges. Place the cooked eggs onto toasted english muffin, top with hot sauce and enjoy right away!
